Courgette omelette
1 whole egg
1 egg white
1 cup grated zucchini, squeezed dry
Chopped chives (to taste)
1-2 green onions, sliced
20-30 g grated cheese
Salt and pepper to taste
Preheat the air fryer to 200°C .
Grate the zucchini and squeeze out as much liquid as possible.
Slice the green onions and chop the chives.
In a bowl, mix together the grated zucchini, chives, and sliced green onions.
In a separate bowl, crack the whole egg and the egg white, and whisk them together with a fork. Season with salt and pepper.
Pour the egg mixture over the vegetable mixture and add the grated cheese. Stir well to combine.
Line the bottom of a small baking dish (approximately 12 cm in diameter) with parchment paper and lightly spray it with oil.
Pour the egg and vegetable mixture into the prepared dish and place it in the air fryer. Bake for 8-10 minutes at 200°C .
