Coronation Chicken Vol au Vent
Ready-made small puff pastry cups (Vol au vent)
Coronation chicken Salad:
2 cooked chicken breasts
100 g mayonnaise
2 tsp mild curry powder
2 tbsp mango chutney
1 tbsp finely chopped apricots
1 tbsp slivered almonds, crushed
1 finely chopped spring onion
Chives
Start by finely chopping the chicken breasts.
Mix the mayonnaise, curry powder, and mango chutney together thoroughly. Add the chicken to the curry mayonnaise along with the almonds, spring onion, and apricots. Mix well and refrigerate for a few hours.
Fill each puff pastry cup with the chicken salad and garnish with a little chopped chives on top.
