Coronation Chicken Salad

This salad was originally created for the coronation of Queen Elizabeth in 1953 but has been popular for a long time as a filling for sandwiches.

1 cooked chicken breast

80 g mayonnaise

40 g sour cream

2 tsp mild curry powder

30 g mango chutney

1 heaping tbsp golden raisins (sultanas)

1/2 tbsp chopped apricots

2 tsp almond flakes

1 small spring onion, finely sliced

Start by mixing together the mayonnaise, sour cream, curry powder, and mango chutney.

Cut the chicken breast into small pieces and stir it into the sauce along with the spring onion, apricots, raisins, and almond flakes.

The salad can be stored in the refrigerator for 2-3 days.

It’s excellent in sandwiches along with sliced iceberg lettuce and thin cucumber slices.
