Coconut cookies
125 g coconut
125 g all-purpose flour
125 g margarine (or butter)
125 g sugar
1 egg
Mix all the ingredients together and knead into a dough.
Roll the dough into small balls.
To create a pattern on the cookies, press down each ball with a fork dipped in hot water between presses.
Bake at 200°C for 10 minutes. Be careful not to overbake them, as they can become very hard.
It's best to store the cookies in a bag to keep them soft.
