Cinnamon Rolls
14 dl flour
1 dl sugar
2 tsp dry yeast
1 tsp salt
500 ml milk
90 g butter
1 capful cardamom extract
For filling:
Melted butter
Cinnamon sugar
Mix all the dry ingredients together. Heat the milk and butter together. Knead the dough and let it rise.
Divide the dough into two parts. Roll out one half into a square the size of a baking tray. Brush the dough with melted butter and sprinkle cinnamon sugar over it. Then roll the dough up into a log and cut the log into small rolls.
Bake at about 230°C until the rolls are just beginning to brown. You can make a glaze to spread on top of the rolls (powdered sugar, water, and cocoa).
During experimentation, I found that you can make 1/4 of the recipe, which fits perfectly into one large roll like those in Icelandic bakeries.
