Chocolate and Peanut Cookies
180 g all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
125 g soft butter
90 g sugar
100 g powdered sugar
1 teaspoon vanilla extract
1 egg
150 g milk chocolate, chopped
100 g salted peanuts, coarsely chopped
Preheat the oven to 180°C.
In a mixing bowl, cream together the butter, sugar, powdered sugar, and vanilla extract until well combined.
Add the egg and beat well.
Sift the dry ingredients (flour, baking soda, and salt) into the mixture and stir until combined.
Gently fold in the chopped chocolate and peanuts.
The dough will be quite soft, so it can be helpful to chill it in the refrigerator for about 30 minutes before scooping it onto a baking tray lined with parchment paper.
Bake for 6-10 minutes or until the edges are lightly golden.
Allow the cookies to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
