Chocolate Cupcakes
4 tbsp cocoa powder
45 g melted butter
3 tbsp lukewarm water
6 tbsp buttermilk
1 egg
1 egg white
3/4 cup sugar
3/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Mix the cocoa and butter together, then add the water, buttermilk, and eggs. Stir well, then fold in the dry ingredients. Bake in cupcake liners for 20 minutes at 180°C or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely before decorating with chocolate buttercream, gummy worms, and chocolate cookie crumbs.
Chocolate Buttercream:
150 g butter
450 g powdered sugar
1 tsp vanilla extract
4 tbsp cocoa powder
A little milk as needed (add very little at a time)
Once the frosting is on the cupcakes, stick gummy worms into the frosting and sprinkle some cookie crumbs on top. I use chocolate cream-filled cookies, which I blend in a mini food processor to create a crumbly, dirt-like texture.
