100 g margarine (or butter)

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 1/2 cups all-purpose flour

1 tsp baking soda

1/4 tsp salt

1/2 cup desiccated coconut

100 g chocolate, chopped

Cream together the margarine, brown sugar, and white sugar until light and fluffy.

Add the egg and mix well.

Gradually add the flour, baking soda, salt, desiccated coconut, and chopped chocolate to the mixture and knead until combined.

If the dough is too dry, add a small amount of almond milk to achieve the right consistency.

Chill the dough in the fridge for at least an hour before baking.

Preheat the oven to 200°C.

Roll the dough into small balls and place them on a baking sheet lined with parchment paper.

Bake for 5-8 minutes, or until the cookies start to turn golden around the edges.

Allow the cookies to cool on a wire rack before storing them in an airtight container.
