Chicken with Peanut Butter Sauce
4 chicken breasts
1 tsp mild curry powder
Oil for frying
For the sauce:
4 tbsp peanut butter
2 tbsp honey
1 tsp soy sauce
A splash of water
2 spring onions
1 lime
Basmati rice
Cut each chicken breast into three pieces. Sprinkle curry powder over the chicken and fry in oil until cooked through.
In a separate bowl, mix together all the ingredients for the sauce (peanut butter, honey, soy sauce, and a little water).
Once the chicken is cooked, pour the sauce over the chicken in the pan and let it heat for a few minutes.
Serve with cooked basmati rice, lime wedges, and sliced spring onions.
