Chicken Avocado Canapés
3 chicken breasts
2 avocados
1 lemon
Salt and pepper
2 red onions
1 tbsp olive oil
2 tbsp brown sugar
3 tbsp balsamic vinegar
2 baguettes
Grill the chicken breasts until fully cooked, then let them cool.
Mash the avocados with a fork and mix with the juice of one lemon. Season with salt and pepper to taste.
Slice the red onions thinly. Heat olive oil in a pan and sauté the onions until soft. Add the brown sugar and balsamic vinegar, cooking for a few more minutes until caramelized.
Assemble the canapés: Slice the baguettes into small slices. Spread each slice with the avocado mixture, and top with some arugula.
Slice the cooled chicken breasts thinly and place on top of the arugula.
Finish with caramelized onions: Top each piece with the caramelized onions and sprinkle with pine nuts.
Alternatively, you can use the same filling in tortilla wraps.
