Cherry Muffins
50 g sugar
150 g butter
3 eggs
220 g flour
1 tsp baking powder
100 g cocktail cherries, coarsely chopped
75 g marzipan, grated
60 ml milk
15 g toasted almond flakes
Start by creaming the butter and sugar together until well combined. Add the eggs one at a time, mixing well after each addition.
Sift the flour and baking powder together, then gently fold it into the mixture with a spatula.
Finally, fold in the grated marzipan and chopped cherries, mixing gently to combine.
Pour the batter into a prepared cake pan and bake at 175°C for 25 minutes, or until a toothpick inserted into the cake comes out clean.
