There are many methods for making candied potatoes, and opinions vary on whether to add cream or water or skip it altogether. However, here is the method that has worked best for us:

1 kg pre-boiled potatoes (or boiled, peeled potatoes)

1 dl sugar

1 tbsp butter or margarine

First, place the potatoes in hot water so they can heat through (the easiest way is to pour hot water over them from a the kettle while preparing another ingredient).

Put 1 dl of sugar in the bottom of a pan and heat it until the sugar melts. Then add the butter to the sugar and mix well.

Turn off the heat under the pan. Drain the water from the potatoes and let them sit in the colander for 1 minute to allow the water to drip off. Pour the hot potatoes into the caramel in the pan, tossing them in the caramel to coat.

Transfer the candied potatoes to a bowl and soak the pan to make cleaning easier.
