Canarian Potatoes

These may not be complicated, but this is the side dish I always order with every meal in Tenerife.

Small potatoes

2-3 tbsp coarse salt

Alioli

Chives

Boil the small potatoes in very salted water until tender.

Once the potatoes are cooked, drain most of the water, leaving a small amount at the bottom of the pot. Let the water steam off to create a salt crust on the potatoes.

Chop chives over the salted potatoes and serve with alioli.
