Cajun chicken pasta
Spice mix:
2 tsp paprika
1 tsp oregano
1 tsp thyme
1 tsp garlic powder
1 tsp onion powder
1/4 tsp black pepper
1/4 tsp garlic salt
1/8 tsp cayenne pepper
1/2 tsp salt
3 chicken breast, cut into bite-size pieces
1 Tbsp oil
1 small onion, chopped
250 g penne pasta
400 g chopped tomatoes
500 ml water
2 chicken stock cubes
100 g cream cheese
2 spring onions, sliced
1. Heat oil in a large skillet and cook the chicken. When the chicken has turned white (does not need to be cooked through at this point) add the chopped onion. Cook 2-3 minutes before adding spices.
2. Cook for one minute and add chopped tomatoes, water, stock cubes and dry pasta. Bring to boil, reduce heat, cover and simmer for 10-15 minutes or until the pasta is cooked. Give the pasta a stir after the first 5 minutes to cover the pasta in the sauce.
3. Stir in cream cheese to get creamier sauce.
4. Sprinkle with sliced spring onion and serve.
