Buttermilk pancakes
2 eggs
2-3 dl buttermilk (almond milk works too)
40 g butter
250 g flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp salt
Mix together eggs, 2 dl of buttermilk, and all the other ingredients. Thin out the batter with buttermilk as needed. Grease a frying pan with butter. Use a medium-sized ladle and pour batter to make pancakes about 10-15 cm in diameter.
When the edges are slightly baked, and you can see bubbles forming on the surface of the pancake, it's time to flip it. Add a little butter each time you place a new pancake on the pan.
Serve with Jack Daniels syrup (or regular maple syrup).
Here's how to make Jack Daniels syrup:
Pour 1/3 of a bottle of maple syrup into a saucepan and add a splash (e.g., 1-2 tbsp) of Jack Daniels. Heat together in a saucepan until the syrup begins to boil and thicken slightly. It's best to serve it hot with the pancakes.
