Broccoli chicken casserole
1 head of broccoli
3-4 chicken breasts
1 tin Campbell’s cream of mushroom soup (284 ml)
3 tbsp light mayonnaise
1/2 chicken stock cube dissolved in 2 tbsp water
2 tsp mild curry powder
Salt and pepper
50 g grated cheese
Sauté the chicken in a little oil and season with a bit of salt and pepper.
In a bowl, mix together the chicken broth, mushroom soup, mayonnaise, and curry powder.
Tear the broccoli into small pieces and arrange them in the bottom of a baking dish.
Layer the sautéed chicken over the broccoli and pour the sauce mixture on top. Sprinkle the cheese over everything.
Bake in the oven for a few minutes until the cheese is golden (about 10-15 minutes).
Serve with rice and a nice salad.
