Black Bean Burgers
2 tins black beans, rinsed and drained
1 tsp oil
1/2 pepper, finely chopped
1/2 onion, finely chopped
3 cloves garlic, pressed
1 1/2 tsp cumin
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp smoked paprika
1/2 cup panko breadcrumbs
1/2 cup feta cheese
2 large eggs
1 tbsp Worcestershire sauce
Preheat the oven to 170°C and spread the rinsed black beans on a baking sheet lined with parchment paper. Bake for 10 minutes to dry them out.
In a pan, heat the oil and soften the pepper, onion and garlic.
In a food processor, combine the sautéed vegetables with the eggs, feta cheese, spices, and breadcrumbs. Blend until smooth.
Add the black beans to the food processor and pulse until the beans are roughly mixed in with the vegetable mixture.
Shape the mixture into 8 patties. If the mixture is too wet, you can add a little flour to help with shaping.
Bake the patties in the oven at 190°C for 10 minutes on each side, or pan-fry in a little oil until golden brown.
Serve on hamburger buns with lettuce and a good burger sauce or chipotle mayonnaise, topped with avocado slices.
