Best Choc Cake Ever
This recipe is from my friend Guðný, and it might just be the best chocolate cake I've ever tasted.
250 g flour
150 g sugar
150 g light brown sugar
4 - 4½ tbsp cocoa powder
1 tsp baking soda
1 tsp baking powder
½ tsp salt
2 eggs
2/3 cup milk (180 g)
½ cup sour milk (130 g)
125 g melted margarine, slightly cooled
1 tsp vanilla extract
Preheat the oven to 175-180 degrees.
Combine the dry ingredients in a bowl. In another bowl, whisk together the eggs, fresh milk, sour milk, and vanilla extract until well blended. Mix the contents of both bowls together and stir until everything is combined well, but no longer than 2½ minutes. Bake for 25-30 minutes.
Frosting:
½ cup powdered sugar
100 g soft butter or margarine
½ tsp vanilla
50 g melted and slightly cooled dark chocolate
Sift the powdered sugar into a bowl and melt the chocolate over a water bath. Once the chocolate is melted, mix the butter into the chocolate. Gently combine this mixture with the powdered sugar and vanilla extract.
