Beef Taquitos
Taquitos are small wheat tortillas filled with meat. They are tightly rolled into a cylinder around the filling and are usually deep-fried. Here’s a healthier version of the dish, using only a fraction of the oil for frying.
400 g ground beef
1/2 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp oregano
1/2 tsp salt
1 tsp cumin
1 tsp garlic powder
2 tsp mild chili powder
1-2 dl salsa or taco sauce
50 g cream cheese
100-200 g shredded cheese
12-14 small corn tortillas
Cook the ground beef in a pan and season with the spices. Add the salsa sauce and cream cheese to the pan. The mixture should not be too wet. Remove from heat and distribute the filling, along with the cheese, into the tortillas (2-3 tbsp in each tortilla). Roll up the filled corn tortillas.
Preheat the air fryer to 200°C. Brush the rolled tortillas with oil and place them seam side down. Bake for 4 minutes, flip the tortillas, and bake for another 4 minutes or until they are beautifully golden.
Serve with sour cream and guacamole.
