Banana Bread Muffins

2 ripe bananas, mashed

1/4 tsp vanilla extract

1 egg

20 g soft margarine

50 g sugar

50 g brown sugar

1 tbsp maple syrup

1 tsp cream of tartar baking powder

1/2 tsp xanthan gum

1/8 tsp salt

1/4 tsp cinnamon

50 ml milk

50 g almond flour

100 g gluten-free flour

50 g gluten-free oats

1 dl pecans (optional)

Preheat the oven to 175°C (350°F).

Beat together the sugar, brown sugar, egg, and soft margarine.

Mash the bananas well and add them to the bowl along with the vanilla extract and maple syrup. Mix briefly.

Finally, mix in the dry ingredients and milk.

Pour the mixture into muffin cups and place a pecan on each muffin.

Bake for approximately 40 minutes, or until a toothpick inserted into the muffin comes out clean.
