Asparagus Bread Log
"Rúllutertubrauð" is a type of bread where the dough is baked first and then sliced into large, crustless sheets. These thin, rectangular slices of bread are sold in every grocerystore In Iceland. They are ideal for spreading with fillings, like cheese or other savory options and can be served hot or cold. Once the filling is applied, the bread is rolled up into a log shape and served, creating a filled bread roll without a crust. It's a versatile base often used for making savory rolled appetizers or sandwiches.
1 sheet of pre-baked, crustless roll bread (Rúllutertubrauð)
1 container of cheese spread (approx. 300 g)
2-3 tsp mayonnaise
200 g ham strips
1 tin of green asparagus
100 g shredded cheese (reserve a little for topping the roll)
A bit of asparagus liquid (from the can)
Season all (or seasoning of your choice)
In a bowl, mix the cheese spread, asparagus, ham, and mayonnaise.
If the mixture is too thick, add a little liquid from the asparagus tin to thin it out.
Spread the mixture evenly over the sheet of roll bread.
Roll the bread up tightly like a log.
Sprinkle the reserved shredded cheese and a bit of "Season All" on top of the roll.
Bake in a preheated oven at 200°C (390°F) for 15-20 minutes or until golden and heated through.
