Almond Cake

150 g margarine
150 g sugar
2 eggs
100 g flour
50 g ground almonds
1 tsp almond extract
Cream together the sugar and margarine in a mixing bowl.
Add the eggs one at a time, mixing well after each addition.
Stir in the dry ingredients and almond extract until combined.
Pour the batter into a greased baking dish and bake at 180°C for 45 minutes, or until a toothpick comes out clean.
Icing:
2 dl powdered sugar (120 g)
A few drops of pink or red food coloring
1-3 tsp water
In a separate bowl, mix the powdered sugar with food coloring.
Gradually add water, a little at a time, until you reach your desired consistency for the icing (not too thin).
Once the pastry has cooled, drizzle or spread the icing over the top.
